The Plant is steadily developing into Chicago's premier urban farm and food business incubator. It was originally a 93,500-square-foot meatpacking facility. Today, this vertical farm and food business operation combines non-profit and for-profit models to foster sustainable agriculture. It will eventually provide 125 jobs. The Plant features sophisticated growing systems including tilapia-fueled aquaponic vegetables, a craft beer brewery and other sustainable artisanal food businesses. Also in the works is a renewable energy project featuring a massive anaerobic digester; when completed, it will consume 30 tons of food waste per day to generate energy and provide heating and cooling. The Plant is a prime example of local efforts to build a more sustainable city.
